Shuixian is the workhorse cultivar of the Wuyi Mountains and, made properly with a charcoal roast, one of the great teas of China. Three separate roastings over glowing charcoal, with rest between each, drive off the green and leave behind cocoa, dried longan, sandalwood and wet slate.

The signature is yanyun — a cooling, mineral sensation that sits in the throat after you swallow and stays there. Unlike most oolongs, this one is better in its second year than its first, and it takes boiling water happily.

Unopened tins can be returned within 30 days for a full refund. If a tea is not to your taste, tell us — we would rather send you something you like than keep the money.
